I can't seem to find a datasheet for the ANTBAT3 board that comes with the extender kit, does one exist?      

It doesn't exist in its own document, but there is a copy of the schematic near the end of the ANT BLAZE Starter Guide.      

Any chance there is a pin mapping that has the pins labeled for usage with the network processor? (i.e. signals like PORTSEL labeled)      

You'll have to compare the Molex connector mapping to the D52 Module Datasheet, the M6 layout compares directly with the Molex connector pins, particularly Appendix A on Page 35 of the datasheet.

So for instance Molex connector pin 17 would be used as nSUSPEND in UART mode, which maps to BUTTONA or Breakout Pin 2 on the AA battery board.
